Grilled Chicken with Lemon & Oregano 07/02/2010
I down sized this recipe for two people. I really wasn't sure what to expect and ended up marinating the chicken for a couple hours instead of the 30 minutes that the recipe calls for. The chicken turned out delicious! It was just the right amount of lemon- not too sour at all.
I made some potato wedges as well. I cut the potato into for quarters and then sliced them into wedges. Placed them in a foil packet with olive oil, sea salt and pepper. It works better on the grill if grease the inside of the foil packet before sealing the potatoes inside. They turned our delicious and had just the right about of flavor to balance out the chicken. The last addition were some french cut potatoes. Delicioso!
